Hello, I am Madhura and welcome to Madhurasrecipe Marathi.
Today let's see how to make crispy and crunchy jawar flour thalipeeth.
Here in a bowl I have 1/4 cup pohe. I have washed the pohe well and soaked in water for about 15-20 minutes.
And draind the water from it. You can see. Pohe are soaked really good.
Let's mash the pohe. Why am I adding pohe to jawar flour thalipeeth?
If you make thalipeeth using just jawar, it becomes a bit chewy. Pohe add crunch to it and thilipeeth becomes light.
If you have letf over rice, you can mash it and add instead of pohe.
I have mashed the pohe really good. To it I am adding 1 cup jawar flour.
Add just 2 tsp wheat flour. You can add mix flours to this.
Like rajgira flour, nachani (Nagali) flour, soya bean flour etc.
This thalipeeth also tastes good by adding all flours. Also it becomes healthy too.
Let's add remaining spices to this. 1 tsp garam masala, garlic-green chilli paste,
I have taken 2 green chillies and 5-6 garlic cloves and blended it in mixer.
1/4 tsp turmeric powder, 1/2 tsp red chilli powder, 1 tsp coriander powder
Add coriander powder a bit more. Here I have 1/4 tsp carom seeds and 1/4 tsp cumin seeds
Add it. Salt to taste, finely chopped onion, and lots of finely chopped coriander.
Mix jawar flour well in the moisture present in pohe.
Once everything is mixed well, add a little water at a time and make dough for thalipeeth.
The dough should be neither too thick nor too thin. It should a bit softer.
But it should not be too thin. Here I have kneaded the thalipeeth dough.
You can see its consistency. it is not too thick. Also it is not too thin too.
For this flour I have used 1/4 cup water. Cover the dought and rest it for about 15-20 minutes.
I have rested thalipeeth dough for about 30 minutes after kneading. Let's make thalipeeth of it.
I take a pan and add a little oil and spread it. So that thalipeeth won't stick to pan.
And oil gives nice crisp to thalipeeth. I am adding few sesame seeds.
Sesame seeds look good on thalipeeth and ther taste nice too.
I am taking a small ball of dough. Lets put this dough ball on sesame seeds. Roll the thalipeeth.
You can dip your fingers in water for rolling the thalipeeth if it is not getting rolled properly.
If you want, you can roll thalipeeth on wet cloth and then transfer it on pan.
But mostly use 2 pans while preparing thalipeeth and roll thalipeeth directly on pan.
You can see. I have rolled the thalipeeth thin and nice. Turn on the gas.
Let's cover and cook this for about 4-5 minutes. I have cooked this for about 5 minutes.
I am removing the lid. Let the water that is collected on lid drop on thalipeeth.
So that it won't get dry as there is possibility that jwariche thalipeeth may get dry.
Cook for another 2-3 minutes until lower sides gets cooked really good. Flip over.
I have cooked the thalipeeth for another 3-4 minutes. Let's flip this now.
Wow.. It has got nice colour. Cook thalipeeth for another 3-4 minutes from another side too.
We make a hole in the centre after rolling the thalipeeth. One or 4 around it.
You can do it if you want. Steam escapes from the holes while cooking thalipeeth.
I have made small thalipeeth only. So I haven't made holes to it. You can do it if you want.
I have cooked thalipeeth for 3-4 minutes from another side too. Let's take it into a serving dish.
Wow.. You can see. It has got nice crisp.
And sesame seeds also get roasted nicely with thalipeeth. They taste amazing.
Jwaricha thalipeeth goes well with dahi, peanut chutney or pickle. You can have it as it is.
Important thing is if you want to prepare on eleventh hour, you can make dough beforehand and store in freeze.
Take out from freeze 30-45 minutes before making thalipeeth and make thalipeeth.
This a very quick and healthy recipe.
